I concocted this recipe while fasting from meat, meat products, dairy, etc. for Orthodox Easter. My daughter said this was the best chili she has every had…and we make a lot of chili here. We used the beefless type of crumbles but if you don’t care if it’s vegan then you can just add regular lean ground beef or just add some extra cans of drained beans if you don’t have crumbles or beef in your frig.
I suppose the reason we all liked it is because it has a combination of tangy and sweet and heat from the jalapenos on top. If your family loves spicy then by all means throw some chopped fresh jalapeno’s into the chili will simmering so it is spicy throughout!
This is a simple recipe, you just through everything together and once it comes to a light boil, turn down the heat and let it simmer for 30 minutes, that’s it! Make some basic cornbread to go with it or eat with crackers. If you want to make a vegan version of cornbread then use a non-dairy version for any milk called in the recipe, and for each egg in the recipe I just used an additional teaspoon and a half of baking powder mixed with 1/8 cup of water. It turned out great!
You will need:
- 1 bag frozen beefless ground crumbles (about 14 oz)
- 1 bag frozen chipotle black bean crumbles (about 16 oz)
- 3 cans chili beans (about 15.5 oz each)
- 1 can corn, drained
- 3 cans tomato sauce (15 oz each)
- 1 can bold flavor sloppy joe sauce (16 oz)
- 1 can original flavor sloppy joe sauce (15 oz)
- 1 ounce packet original chili seasoning (or spicy version, if you prefer)
- Fresh sliced or pickled jalapenos, chopped green onions, sour cream and/or cheese (vegan or otherwise), for garnish (optional)
Steps:
- Add chili beans (with liquid), corn, tomato sauce, sloppy joe sauces, and chili seasoning to pot and stir well, and bring to a simmer.
- Once sauce comes to a simmer add in the bags of crumbles, stir well, bring to a simmer again and let cook on low to medium heat for 30 minutes.
- Garnish with your favorite toppings and serve with crackers or cornbread and enjoy!
