Melidzanes me Patates Kokinista (aka Eggplant & Potatoes in Tomato Sauce)

Roasted Lemon Oregano Pork Belly with Potatoes

Pork belly has become one of my favorite meats (or should I say fats, since it’s basically half and half) to cook with. My appreciation for it fostered while I was in Thailand learning how to cook traditional Thai dishes. They use it in a…

Pita Bread Chips

Pita Bread Chips

Are their times where you are tired of using the typical cracker or chip with your dips or as a crunchy snack? Me too! At those times a nice crispy pita chip fits the bill. Yes, you can go buy a bag of commercialized pita chips, which are okay and work in a pinch, but they are not as flavorful as these pita chips (at least in my opinion 🙂 ).

These can be made totally crunchy or with a slight crunch and a tender chewiness. Best of all, they are easy to make and can be done in less than 30 minutes, start to finish!

You just need:

  • 6 pita bread rounds (white or wheat, store bought or homemade)
  • 1/8 cup olive oil
  • 1/8 cup lemon juice
  • 1 teaspoon oregano
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper

Steps:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Whisk the olive oil, lemon juice, oregano, salt and pepper until combined and thickened.
  3. Brush it generously on both sides of your pita bread.
  4. Stack pita and cut in half, then cut each half in fourths. So, 8 triangles per pita. If you prefer square chips then cut them in squares 🙂 .
  5. Place pita on a sheet pan, in a single layer, leave some space in between if you can.
  6. Bake for 15 minutes, turn and bake another 10 minutes. Remove from oven and enjoy! Well, let them cool for a couple of minutes first so you don’t burn yourself 🙂 .
